Our Story

Herbert and Brianna Acosta, a husband-and-wife duo. Born and raised, they are local natives to Panama City Beach, Florida, and are the driving force behind the panhandles latest concept --Local Konbini. Together, these two have shared a love for food, culture, and cats for nine wonderful years. They are now embarking on their dream of building a food adventure that reflects their shared passion for Japanese culture and cuisine. With aspirations of starting a family of their own, buying a food truck, and one day opening a brick-and-mortar restaurant, they’re blending their talents to create something truly special for their community— Local Konbini.

 

A pop-up concept inspired by Japan’s vibrant food and Konbini culture. In Japan, Konbini—convenience stores known for their incredible variety, reliability, quality, and charm—are an integral part of daily life. With Local Konbini, these two aim to bring a slice of that unique culture back home to their roots in the Florida panhandle and surrounding areas.

 

Herbert is a passionate chef whose culinary career has been shaped by over 20 years of experience in some of 30A’s most renowned and celebrated restaurants; including Café 30A, Pescado, Restaurant Paradis, The Citizen, and Amichi. Known for his exceptional skill, creativity, and relentless drive, Herbert can be found in the heart of any kitchen he is in. Crafting dishes that reflect his love for bold and authentic flavors; his culinary expertise is the foundation of Local Konbini's menu.

 

Brianna, the brain child behind the concept, is an artist and entrepreneur. She herself carries over 20 years of experience as a seasoned sever in our local restaurants and as a sales person. She complements the venture with her creativity and vision; ensuring the experience is both visually captivating, deliciously satisfying and authentic.

 

Local Konbini

currently focuses on mastering the Taiyaki,

Japan’s beloved fish-shaped cake like waffles filled with sweet or savory flavors such as chocolate, custard, or anko (a Sweet redbean filling.. trust us, it's better than it sounds)

However, It is their mission

to expand the menu to include more beloved Japanese staples and fun imports in the coming future.
